Sourdough Honey Lavender Sweet Rolls

Ingredients

For the Dough

  • 1/2 cup warm milk
  • 1/2 teaspoon dried culinary lavender
  • 1 teaspoon active dry yeast
  • 1/4 cup honey
  • 4 tablespoons salted butter
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 cup sourdough discard
  • 3 cups all-purpose flour

For the Filling

  • 1/2 cup granulated sugar
  • 1 teaspoon dried culinary lavender
  • 4 tablespoons salted butter softened
  • 2 teaspoons honey
  • 1/4 cup heavy cream to pour over rolls before baking (optional)

For the Cream Cheese Frosting

  • 4 ounces full-fat cream cheese
  • 1 teaspoon vanilla extract
  • 2 teaspoons honey
  • 2 tablespoons milk
  • 1 1/2 cups powdered sugar

Instructions

Make the Lavender Milk

  • Warm the milk in a small saucepan over low heat until it reaches about 100–110°F. Stir in the dried lavender and let it steep for several minutes. Strain out the lavender and let the milk cool to a lukewarm temperature.

Make the Dough

  • In a small bowl, combine the lavender-infused milk, yeast, and honey. Let it sit until foamy and bubbly, indicating the yeast is active (about 5-10 minutes).
  • In a large mixing bowl, combine the yeast mixture, melted butter, egg, salt, and sourdough discard. Gradually add the flour, mixing until a soft dough forms. Knead until the dough is smooth and elastic, either by hand or using a stand mixer with a dough hook (about 7-9 minutes). The dough should be slightly tacky but not overly sticky.

Let the Dough Rise

  • Place the dough in a greased bowl and cover it. Let it rise in a warm place until doubled in size (about 1-2 hours).

Make the Filling

  • In a small bowl, mix together the sugar, dried lavender, softened butter, and honey until smooth and spreadable.

Shape the Rolls

  • Punch down the risen dough and roll it into a rectangle. Spread the lavender honey filling evenly over the surface, leaving a small border. Roll the dough tightly into a log and cut it into 8 equal pieces.

Bake the Rolls

  • Preheat the oven to 350°F. Pour 1/4 cup of heavy cream over the rolls (optional). Bake until the rolls are golden brown on top, around 25-30 minutes. Let them cool slightly while you prepare the frosting.

Make the Cream Cheese Frosting

  • In a mixing bowl, beat together the cream cheese, vanilla, honey, and milk. Gradually add the powdered sugar, mixing until smooth and creamy.

Frost and Serve

  • Spread the frosting over the warm rolls. Optionally, sprinkle with extra dried lavender for garnish. Serve and enjoy!
