Friday nights in our house means IT’S PIZZA NIGHT. Sometimes pizza night means getting pizza delivered, sometimes it means frozen pizza, and sometimes I’m craving my pizza dough and decide to make it from scratch.
I’ve been making homemade pizza for years now, but I was looking for a way to doctor up our usual go-to recipe. This cheeseburger sheet pan pizza was created from a craving I had and after a few tweaks, I think I’ve perfected it.
The melty cheese, the crispy and golden brown edge of the crust. Honestly, we’ve been enjoying this homemade pizza even more so than going to our local pizzeria.

Ingredients and Substitutions
For the dough:
- warm water
- active dry yeast
- granulated sugar – You can also use equal parts brown sugar or honey.
- extra-virgin olive oil
- all-purpose flour
- salt
- cornmeal (optional, but highly recommended!) – This keeps the bottom of the crust nice and crispy.
For the sauce:
- ketchup
- mustard
- mayonnaise
For the toppings:
- ground beef – I used lean ground beef.
- onion – white onion or yellow onion works great for this recipe.
- dill pickles – pickle spears or pickle chips work for this recipe. you’ll chop them up and add them to the pizza. try other flavors such as spicy pickles or bread and butter.
- mozzarella cheese – I used half mozzarella cheese and half sharp cheddar cheese.
- sharp cheddar cheese – american cheese, pepperjack cheese, or monterey jack cheese are all great options.

Step-By-Step Instructions
Step One: Make the pizza dough. Add the warm water, yeast, and sugar to the bowl of a stand mixer. Cover with a kitchen towel and let sit for about 5 minutes or until the yeast mixture is foamy.
Step Two: Add the hook attachment to your stand mixer and add the olive oil, flour, and salt to the bowl. Let the mixer knead the pizza dough on medium speed for about 7 minutes. Cover the dough ball with a kitchen towel or plastic wrap and set the bowl in a warm place in your kitchen while it rises for about 2 hours.
Step Three: While the dough rises, chop the onion and grease a skillet with butter or oil. Add the beef and onions to the skillet and cook on medium heat over the stove until the ground beef is fully cooked (about 7 minutes). Add salt and pepper to your liking. Drain excess grease and set aside.
Step Four: Heat oven to 430 degrees Fahrenheit. Grease the sheet pan and sprinkle cornmeal over the pan. Once the dough ball has doubled in size, it’s ready to bake.
Step Five: Shape dough. Roll the pizza dough out over your sheet pan (or use your hands to gently pull and guide it to fit the edges of the pan). Use your hands to roll the outside of the dough to create a thicker crust at the edges.
Step Six: Combine the ketchup, mustard, and mayonnaise in a bowl. Spread it over the pizza dough.
Step Seven: Spread the ground beef mixture over the sauce.
Step Eight: Sprinkle the pickles, then the cheese over the ground beef mixture. Bake pizza in the preheated oven for 30-35 minutes. Cook time will vary by oven.

- large skillet – I love my Lodge cast iron skillet.
- rolling pin – This is optional. I used my hands to manipulate the pizza dough.
- plastic wrap
- stand mixer or wooden spoon
You don’t have to. You can use store-bought pizza dough if you’re low on time. Skip the dough rising part and follow the steps from step five on.
No worries! Mix the dough by hand using a wooden spoon. You will then need to knead the dough with your hands for about 7 minutes.
A couple of possibilities: Your yeast could be old. If it’s no longer fresh, it will not activate. If it can’t activate, you’re not going to get the dough to rise. The other possibility is water temperature. The water should be warm, but not hot. We’re looking for 110-115 degrees Fahrenheit. If it is over that, you risk killing the yeast.

For the pizza dough
- 1 1/2 cups warm water the water should be 110-115โ
- 2 1/4 teaspoons active dry yeast a packet of active dry yeast contains this exact amount
- 2 tablespoons granulated sugar
- 2 tablespoons extra-virgin olive oil
- 3 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup cornmeal optional, for dusting the bottom of the pan
For the pizza sauce
- 1 cup ketchup
- 1/3 cups mustard
- 2 tablespoons mayonnaise
For the toppings
- 1 pound ground beef cooked and drained
- 1 cup chopped onions
- 2 cups shredded mozzarella cheese
- 2 cups shredded sharp cheddar cheese
Instructions
- Pour the water, yeast, and sugar into the bowl of a stand mixer. Mix and cover with a kitchen towel for 5-10 minutes. The yeast will be activated once the mixture is foamy.
- Move the bowl to the stand mixer and add the hook attachment. Add the olive oil, flour, and salt to the bowl. Knead on medium speed for about 7 minutes. Stop the mixer and use a rubber spatula to scrape the sides of the bowl if all the dough is not sticking together as it mixes.Note: If you don't have a stand mixer, you can mix the ingredients with a wooden spoon. Use your hands to knead the ingredients on a clean, lightly floured surface.
- You'll know the dough is done kneading when you push your finger against the dough ball and it leaves an indent before gently springing back. Coat the inside of the mixing bowl with olive oil, place the dough ball inside the bowl, and cover with a kitchen towel. Set the dough in a warm place and let it rise for about 2 hours or until it has doubled in size.
- While the dough is rising, chop the onion and set aside. In a greased skillet on medium heat, cook the ground beef and add the chopped onions. Cook the ground beef mixture for about 7 minutes or until the beef is browned and no longer has any pink. Drain the excess grease and add salt and pepper to taste. Set aside.
- In a bowl, mix the ketchup, mustard, and mayonnaise. Chop the pickles and set aside.
- Once the dough has risen, preheat the oven to 430โ. Prepare the baking sheet by coating it with olive oil and sprinkle the cornmeal over the pan. On a clean, lightly floured surface, roll out the pizza dough into a rectangle. You can also use your hands to gently stretch the dough.
- Fit the dough over the baking sheet and work your way around the outside of the dough, rolling the outside in to form the outer crust. Use your fingers to gently push down on the inside of the dough making indents on the bottom of the crust.
- In the following order, evenly spread the sauce, ground beef mixture, pickles, and cheese over the pizza dough. Bake for 30-35 minutes. The pizza will be done when the crust is golden brown and the cheese is nice and melty. Cut into slices and enjoy!
